These two extraordinary grains have perfume and inimitable flavors. The first indicated above is distinctive for its extreme digestibility, the latter has the different quality of gluten than that of the modern wheat. This type of gluten, less elastic and less tenacious, reduces the yield in terms of bread making ability, but at the same time is less toxic to the human organism. Thanks to these characteristics, it is able to be included in the diet of individuals who suffer from gluten sensitivity, although it is not suitable for people with celiac disease.
